U P Style Pasties Filling 2 cups diced raw
potato Mix above ingredients and set aside. Crust 1 lb shortening
(vegetable) Mix flour, shortening and salt until crumbly Directions: Divide dough into about 6 rounds and roll out flat. Divide filling onto each crust. Fold over and crimp edges. (May add oleo or butter before folding.) Place on ungreased cookie sheet and bake at 350 degrees for about 1 hour, 15 minutes. |
Bread Machine Nisu
1 cup [Pet or Carnation] evaporated milk 1/4 cup water 1 egg, beaten 3 T butter, softened 3 to 4 cups bread flour. I use 3-1/2. 1/2 cup sugar 1 tsp salt 1 tsp crushed cardamom or 3/4 tsp powdered 1 tsp dry yeast.
Place ingredients in bread machine in above order. Set machine for light setting 2 hours to bake - estimated, depends on the bread machine.. Yield 1 big bread loaf. |

Bread Machine Cinnamon Rolls. Yields 24 rolls.
1-1/2 cups lukewarm milk 1/2 cup sugar 1/4 cup melted butter 1/4 tsp salt 1 egg, beaten 2 T Cardamom - (optional) 4 cups flour 1-1/4 tsp yeast
Place items in bread machine in the above order. Select dough/pasta setting. There is a 25 minute delay before it mixes. When beeper goes off, take the dough out and divide it in half and have a lightly oiled surface ready to roll each half out flat. Each portion should be about 14'' x 9'' x 1/2” thick.
Have the following ingredients ready for filling (make 2 separate batches): 2 T melted butter 2 tsp or (or more) more of cinnamon 1/2 cup brown sugar

El Beck's Prune Tarts
Pastry:
5
cups flower
3-1/2 tsp baking powder
1 tsp Salt
1 cup sugar
3 Sticks softened butter
1 cup milk
Mix together like for pie crust
Filling:
1 pound pitted prunes
One cup water
Bring to boil so prunes get soft
Add 1/4 cup sugar
Bake:

cool on rack

Lemon Pie
4 eggs
1 lemon (remove elongated end, quarter and remove seeds) 1-1/2 cup (or less) sugar 1/2 cup margarine ( I use slightly less) Blend all ingredients well in blender Pour in unbaked pie shell Bake 350 degrees for 35 - 40 minutes Top with whipped cream. |
Sweet Potato Pie
Boil and peel 4 sweet potatoes
Have a 9 inch unbaked pie shell ready
Ingredients:
2 Cups mashed sweet potatoes
1/2 cup melted butter
1 cup sugar
2 eggs, beaten
1 tsp vanilla
1/4 tsp nutmeg & cinnamon
1/8 tsp cloves & salt
1 cup evaporated milk
Mix altogether
and pour into unbaked pie shell
Bake for 45 minutes
or until silver knife poked in comes
out clean (until set )

Strawberry Pie
You will need 2 baked pie shells Poke unbaked pie shells with fork many times before baking Bake at 450 degrees for about 12 minutes
3 pints strawberries, cleaned
Cook: 2 cups sugar 6 T cornstarch 4 T white Karo syrup 2 cups water Boil this for 5 minutes
As soon as mixture is removed from heat, add small amount of red food coloring Next add 4 T strawberry jello to hot mix and stir well Place berries in pie shells Pour mixture over berries Chill for one hour

Cinnamon Sugar Almond (or Walnuts)
Butter the sides of a 2-quart sauce pan
Combine: 1 cup sugar ½ cup water 1 tsp cinnamon ½ tsp salt
Heat and stir until sugar dissolves and mixture boils. Cook without stirring to soft ball stage (236 degrees) Remove from heat Beat by hand for 1 minute until it just begins to get creamy
Add 1-1/2 tsp vanilla and warm nuts Spread out onto a jelly roll pan and occasionally toss until mixture dries. Recipe does not work well when doubled |

Good Lemon Bars
Melt 2-2/3 sticks of butter
add:
2/3 cup powdered sugar
2-2/3 cup flour
1 rounded tsp salt
Mix together and pat down into 9 x13 pan
Bake at 325 degrees for 20 minutes
Wisk 5 eggs
add:
2-1/4 cup sugar
1/2 cup flour
2/3 cup lemon juice
Pour over baked crust and bake 25-30
minutes longer
Sprinkle with powdered sugar
